I purchase Bob’s Red Mill Organic Quick Cooking Steel Cut Oats at my local Costco but this product can be found in most grocery stores.
These oats are a pantry staple in our home. When freshly cooked they are luxurious and filling. They really are quick, taking only five minutes beyond the time it takes to boil the water. When reheated in the microwave from frozen with a splash of whole milk they are almost as toothsome.
Follow the instructions and serve with a sprinkle of cinnamon and sugar or a drizzle of maple syrup. Add some flax or chia seeds, perhaps some slivered almonds or dried cranberries.
Make an extra batch and portion into a cupcake pan (silicon works best for this purpose). Freeze. Pop the frozen oat “cups” out and place into a freezer safe bag. When short on time in the morning, remove one oat cup and place into a microwave safe bowl with a splash of milk. Heat in the microwave on high for one minute, flip the oats upside down and heat on high for an additional minute.
