Broccoli, Eggplant, Mushroom Baked Pasta Casserole

 One dish meals which include protein, veg and carbs are sometimes a dinner salvation. This recipe makes enough for 4 with plenty of leftovers for a second meal.

Need

  • 3/4lb of pasta
  • large head of broccoli, rough cut (including stem with tough outer skin removed)
  • 1 small eggplant, diced in small cubes
  • 1lb mushroom, sliced
  • 1/2 can or tetrapak of condensed mushroom soup
  • 1 cup of shredded mozzarella cheese
  • 1/3-1/2 cup of pasta water
  • 1 squeeze of lemon juice
  • grated parmesan to dust top
  • salt
  • basil for garnish

How

  • boil pasta, broccoli and eggplant until pasta is almost al dente
  • preheat oven to 400 degrees
  • sauté mushrooms until softened
  • dump pasta and veggies into casserole dish
  • stir in mushroom soup, pasta water, lemon juice and cheese until combined with pasta and veg
    • the mushroom soup and pasta water should combine to make a loose and spare sauce, if the pasta seems a little dry add more pasta water
    • taste and salt accordingly
  • dust top with parmesan cheese
  • put into oven and bake until pasta edges turn golden brown, approximately 20 minutes
  • after removing casserole, julienne basil and sprinkle over top, serve immediately

More

  • sauté some onion or shallot with the mushrooms
  • in a pinch a frozen bag of broccoli florets can be substituted for fresh
  • instead of mozzarella cheese, a mild cheddar will also work well
  • substitute zucchini or summer squash or the eggplant, or leave it out entirely and add in extra broccoli and mushrooms or 1l2 a bag of frozen peas
  • want to up the protein? add shredded/cut cooked chicken or chickpeas
  • if you don’t have basil handy, scallion will work for garnish
  • try adding breadcrumbs on top for a crunch
  • for a more decadent and creamy casserole add a couple splashes of whole milk or heavy cream and increase the amount of cheese
  • divide the pasta in half and place into two separate casserole dishes before putting one in the oven and the other in the freezer for a second meal
