Celebrate Spring with Strawberry Buttermilk Cake

With sweet strawberries taking over the farmer’s market, what better way to enjoy them than in a cozy and simple buttermilk cake.

Recipe adapted from Martha Stewart’s Strawberry Cake


  • 1 1/2 C all purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup sugar
  • 3/4 stick unsalted butter, room temperature
  • 1 large egg
  • 1/2 C of buttermilk
  • 1 tsp of pure vanilla extract
  • 1 lb of strawberries hulled and thinly sliced


  • preheat oven 350 degrees & butter 9 inch pie dish
  • whisk together flour, baking powder and salt in bowl
  • cream together butter and sugar until airy in the bowl of a stand mixer using whisk attachment
    • add the egg, buttermilk and vanilla extract and beat until combined
  • gradually add the dry ingredients until fully incorporated
  • pour the batter into the pie dish and let rest while you slice the strawberries
  • fan out the strawberry slices across the top of the batter
  • bake at 350 degrees for 10 minutes
  • then reduce heat to 325 degrees and bake for another 50-60 minutes until cake is golden brown and toothpick inserted comes out clean
  • let cool and enjoy with a dollop of whipped cream or a scoop of vanilla ice cream
