Savory crepeCheese, wilted greens & egg stuffed crepe draped with bacon

Savory or sweet crepes are delicious for breakfast or brunch (and even a late night snack). The batter is super quick; just dump all the ingredients into the blender and whiz. You can put almost anything inside a crepe; fold or roll and you’re ready to go. Recipe serves 4.

Need for crepes

  • 1 cup of flour
  • 2 cups of milk
  • 2 eggs
  • 3 Tbsp of melted butter
  • Pinch of salt
  • Blender
  • oil or butter for pan
  • Crepe pan or regular small frying pan


  • Blend milk, eggs & salt together
  • Add flour then blend
  • Add butter then blend
    • Batter should be very runny
  • Heat up crepe pan/frying pan with a little butter or oil
  • From blender, pour batter enough to coat the bottom of the pan thinly
  • When edges turn a bare golden brown, flip
    • You will only need a few moments for the second side to finish cooking
  • Re-blend the batter after half has been used as it will settle


  • Make the crepes ahead of time and keep warm in the oven at low heat
  • If you like your crepes crispy, place on a baking rack to prevent the crepes from steaming through

Need for Savory Egg scramble filling

  • 4 eggs
  • Splash of water
  • 1 handful of shredded cheese
  • 2 large handfuls of Spinach
  • 1 chopped Green Onion
  • Salt & pepper
  • oil


  • Wilt spinach and green onions in frying pan with oil
  • Wisk eggs with a splash of water in bowl
  • Pour eggs into pan with greens, slowly scramble
  • Salt and pepper to taste
  • Turn off pan and sprinkle with cheese
  • Scoop scramble into crepes and roll like a burrito


  • Serve with bacon and sausage or fold either into the scramble
  • Substitute any leafy green such as arugula or baby kale for the spinach
  • Substitute the green onion with yellow onion, red onion or chives
  • Add any fresh herbs you have on hand such as basil or flat leaf parsley

Need for Sweet Fillings:

  • Whipped cream
  • Berries
  • Bananas
  • Lemon juice
  • Ricotta
  • Powdered sugar
  • Hazelnut spread


  • Spread hazelnut spread onto open crepe, top with sliced bananas and fold
  • Spread ricotta onto open crepe, drizzle with lemon juice and powdered sugar, then fold
  • Spread whipped cream on open crepe, fold then top with strawberries, blueberries and raspberries


  • Substitute the ricotta for cottage cheese or greek yogurt
  • Fresh or frozen berries work well, make sure to thaw frozen berries to room temperature
  • Instead of bananas or berries try peaches or nectarines or other seasonal fruits
  • Poached pear or softened apple slices would also be delicious
