Easy Baked Eggplant Fries

The perfect side dish or snack. These baked eggplant fries are quick to make and delicious served with a drizzle of honey. The recipe was inspired by one of my favorite restaurants - Poppy - which has a fried eggplant appetizer. Since these are baked they are a healthier option and firmer in texture since they do not soak up a lot of oil.



  • cut eggplant into sticks and dust with flour
  • break egg into shallow dish, add a splash of water and stir to create an egg wash
    • season egg mixture with salt & pepper
  • pour bread crumbs into another shallow dish
  • preheat oven at 350 degrees F
  • coat eggplant fries in egg, then transfer to the panko dish
  • coat fries with panko and place onto a sheet pan
  • spray eggplant fries with coconut oil on all sides
  • bake for 30 minutes until bread crumbs are golden brown and eggplant are cooked through
    • turn halfway through
  • serve warm and drizzled with honey


  • the fries also pair well with garlic aioli or creme fraiche and lemon
  • Chinese or Japanese eggplants would also be great for this recipe
  • though it is often suggested to soak eggplant in salted water to reduce bitterness, I have not found this to be necessary as long as the eggplant is fresh
