Fig, Potato, Oyster Mushroom, Rosemary & Pesto Pizza

My favorite pizza recipe.

Homemade dough fresh from the bread-maker serves as the base for this slightly sweet & mostly savory pizza.

Hearty with slices of creamy Yukon Gold potatoes and studded with silky Oyster mushrooms and sweet figs, this pizza has hints of rosemary and sweet onions.


  • Pizza dough
  • Basil Pesto
  • Shredded Mozzarella cheese
  • Grated Parmesan cheese
  • Dried figs
  • Cooked slices of Yukon Gold potatoes
  • Sautéed Oyster mushrooms
  • Sprig of Rosemary
  • Sliced red onion
  • Sliced scallions


  • Bake or boil potatoes, once cool slice into thin rounds
  • Sauté sliced oyster mushrooms
  • Cut dried figs into halves
  • Thinly slice red onions and scallions
  • Prepare pizza dough into round or square
  • Spread pesto onto dough
  • Sprinkle with chopped rosemary
  • Place potatoes, mushrooms and figs onto pizza
  • Top with shredded mozzarella and grated parmesan
  • Then add sliced red onions and scallions and salt and pepper to taste
  • Bake on grill or in oven at 400 degrees until edges of crust begin to brown and cheese is bubbling


  • don’t have time for homemade pizza dough? buy premade dough at the grocery store
  • substitute dried figs for fresh when in season
  • instead of rosemary, try thyme
  • instead of scallions, try chives
  • In addition to your pesto pizza, make a red sauce pizza with sausage, zucchini, and yellow peppers
