Kids in the Kitchen: Whole Wheat Banana Muffins Two Ways


Baking muffins is a wonderful cooking activity for children. They come together quickly, allow a child to exercise their fine motor skills in their baking and of course they are delicious. Both recipes adapted from food.com.

BANANA WALNUT CHOCOLATE CHIP WHOLE WHEAT MUFFINS

Need

  • 3.5 C whole wheat pastry flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 2/3 C melted coconut oil
  • 2/3 C maple syrup
  • 4 large eggs
  • 2 C mashed ripe bananas
  • 1/2 C warm water
  • 1/3 C chopped walnuts
  • 1/3 C dark chocolate chips

how

  • combine dry ingredients in a large mixing bowl
  • mash bananas in a small medium mixing bowl
    • my son used the thick handle end of our wooden citrus reamer
  • add the melted (and cooled) coconut oil, maple syrup, warm water and eggs to the banana and stir until well combined
  • add wet ingredients to dry and mix  together
  • fold in walnuts and chocolate chips
  • ladle the batter into the muffin cups 2/3 full and bake at 325 for approximately 15 minutes until golden brown and a toothpick inserted comes out clean
  • cool and enjoy

whole wheat banana blueberry muffins

Need

  • 1.5 C whole wheat pastry flour
  • 2/3 C sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 3 large bananas
  • 1 C blueberries
  • 1/3 C coconut oil

how

  • combine dry ingredients in a large mixing bowl
  • mash bananas in a small medium mixing bowl
  • add the melted (and cooled) coconut oil and egg to the banana and stir until well combined
  • add the wet ingredients to the dry ingredients and combine
  • fold in blueberries
  • ladle the batter into the muffin cups 2/3 full and bake at 375 for approximately 20 minutes until golden brown and a toothpick inserted comes out clean
  • cool and enjoy

more

  • these muffins freeze beautifully and can be reheated for breakfast or snacktime
  • instead of blueberries, try substituting cranberries
  • instead of walnuts, pecans or macadamia nuts would be very tasty as well
