Pantry Staple: Hodge Podge Fried Rice


Sometimes all you want to do is use up leftovers and keep it simple. This one pot dish does both.

need

  • chopped onions
  • frozen peas
  • frozen corn
  • baked potato
  • chinese bbq pork (substitute scrambled eggs, ham or small shrimp)
  • rice (fresh, day-old or instant)
  • vegetable oil (I use avocado)
  • sesame oil
  • soy sauce
  • sesame seeds
  • chopped scallions

  • heat pan to medium, add vegetable oil and saute onions
  • add cooked rice to pan and toss
  • add potato, frozen peas and corn as well as meat
    • saute until meat is cooked through
  • drizzle sesame oil and soy sauce to taste
  • garnish with sesame seeds and chopped scallions

more

  • have broccoli, carrots, cabbage, zucchini or any other vegetables? toss those in as well
  • make it vegetarian by adding tofu or soy beans instead of meat
