Gluten has been getting a bad rap as of late.
And though I don’t believe, we will be cutting out gluten entirely from our diets any time soon I have been trying to introduce more gluten-free food items into my recipe arsenal.
This recipe for gluten-free muffins is a Bob’s Red Mill Recipe featuring their 1 to 1 Gluten & Dairy Free baking flour.
Does it taste like a traditional blueberry muffin? Sort of. The flavors and appearance mimic a muffin baked with flour but the texture is where you will notice the biggest difference. Instead of moist, flaky and somewhat airy, the muffin is dense and a little gummy.
So the recipe reality is that these gluten-free muffins are as to be expected not a perfect replacement for traditional blueberry muffins, for those people who are gluten-free by necessity I think this would satisfy a muffin craving. As for myself, I think I will stick with a traditional flour recipe and find other foodstuffs where going gluten-free will be less noticeable.
