I love every member of the onion family and green onions/scallions are a mild and refreshing addition to many dishes. I can’t remember where I first learned that scallions if stored in water will continue to grow but that little bit of kitchen knowledge means that I always have a bunch of scallions on my windowsill.
Sometimes I use the entire scallion. Sometimes just the greens leaves then place the white stumps back into the water and soon there are new green shoots.
Change the water every couple of days and you will have a ready supply of green onions for scrambled eggs, for garnishing soups, stir fries and salads, for folding into biscuits and other baked goods.
